Blueberry Belgian Waffles & Whip Cream
These delicious Blueberry Belgian Waffles are made with plump flavorful blueberries and sweet & creamy homemade whipped cream! They are perfect for a Saturday morning with the family and a soothing warm cup of coffee. Enjoy!
2 cups all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 3/4 cup milk
2 tablespoons vegetable oil
1/2 cup blueberries
For whipped cream
1 1/2 cups heavy cream
2 tablespoons confectioners' sugar
Combine flour, sugar, baking powder, and salt in a large bowl.
Whisk milk, eggs, and oil in medium bowl.
Whisk milk mixture into dry ingredients just until dry ingredients are thoroughly moistened.
Gently fold in blueberries.
Preheat belgian waffle maker.
Pour 1 cup batter onto the center of the bottom grid.
Close top and flip waffle maker.
Bake until golden, about 4 minutes.
Combine heavy cream and confectioners' sugar.
Beat with the whisk attachment of your stand or hand mixer until whipped cream forms.
