We make compote allll the time in my house. It’s just so quick and a wonderful way to use up seasonal fruit. Plus, it tastes out-of-this-world amazing!

Think sweet, tangy and thick, with a wonderful texture from the whole berries. Utter bliss, I’m telling ya!

At the weekends, there’s often a pot of fruit bubbling on the stove so we have compote for the week. If it’s in season, it’ll be on my stove being turned into compote at some point!

My favorite ways to enjoy it are in oatmeal or yogurt, while the kids love it on ice cream and pancakes. Soooo good.

Compote

Compote is similar to jam, but it has far less sugar and you can make it in just 15 minutes.

You can also easily make it in much smaller batches.

It doesn’t last as long as it’s not a preserve, but it never lasts long in my house anyway – there are just so many uses for it!

You can turn many fruits into compote in minutes. I love adding blackberry compote to yogurt, raspberry compote to cheesecake and mango compote to waffles.

Plum compote is awesome on toast and I love adding pineapple compote to oatmeal.

Blueberries – use fresh or frozen berries. Both work perfectly.

Expert tips

How to thicken compote: Fruit can have different moisture levels. If your compote isn’t thickening (keep in mind that it will thicken further as it cools), add 1 tablespoon cornstarch stirred into 1 tablespoon water (called a ‘slurry’), stir it in and simmer for a few minutes. But usually, you don’t need to do this. Blueberries and lemon juice have pectin in them, which naturally thickens it.

Serve this compote warm or cold.

You can make compote with fresh, frozen or canned fruit.

Make it vegan: check that your sugar is vegan. In some countries, such as USA, bone char is used in some sugars. Organic sugar generally doesn’t. In Australia, UK etc most sugar is vegan.

Storage and freezing

  • Blueberry compote will last in the fridge for up to 5 days
  • This compote can be frozen when it’s completely cooled.

Variations

This is such a simple recipe that you can easily add some other flavors to make it extra special. Try these variations:

  • Add 1 teaspoon vanilla or almond extract.
  • Add a cinnamon stick.
  • Try it with orange juice instead of lemon.
  • For adults, add a shot or bourbon, rum or creme de cassis, stirred in at the end.
