Easy Blueberry Crumble

Yields 4-5 servings of Blueberry Crumble

Blueberry Filling Ingredients:

  • 2½ C blueberries
  • 1 t vanilla extract
  • 2 T maple syrup
  • 3 T coconut oil
  • 1 T cinnamon
  • ¼ C coconut flour
  • 1 scoop Vital Proteins Collagen Peptides

Crumble Ingredients:

  • ½ C almond flour
  • ½ C rolled oats
  • ¼ C walnuts
  • ¼ C pumpkin seeds
  • ¼ C sunflower seeds
  • 2 t cinnamon
  • 1 scoop Vital Proteins Collagen Peptides
  • 1 T maple syrup
  • 1 T melted coconut oil
  • Pinch of sea salt

Directions:

  1. Preheat oven to 350°F. Take a cast iron skillet and coat with a small amount coconut oil to prevent sticking.
  2. In a medium-sized bowl, combine all of the filling ingredients and mix until well. You may find that the coconut oil gets hard, but this will melt in the oven.
  3. Add mixed filling into the cast iron skillet and begin to prepare your crumble.
  4. In a food processor, combine all of the ingredients to make the crumble and pulse until everything is chopped into smaller pieces.
  5. Top the skillet with the crumble and place in the oven for 30 minutes.
  6. After the 30 minutes is done, remove skillet from oven and let cool. The berries should be cooked, and the crumble should be nice and crispy.
