Blueberry gin and rose collins

Curio Blueberry and Lime Gin, a few drops of rose water, soda water and a handful of blueberries. Refreshing, zesty and full of summer flavours.

Ingredients

35ml Blueberry Curio Gin
Juice of 1/2 lemon
2 drops of rose water
Soda water
Handful of blueberries

Method

1. Add Curio gin to glass.
2. Squeeze in the juice of 1/2 lemon
3. Add a couple of drops of rose water
4. Add cubed ice
5. Top with soda and a handful of blueberries.

A twist on the classic margarita, with agave syrup rather than triple sec. Originally served at Tommy’s Mexican restaurant in San Francisco and now a classic in its own right.

Raspberry gin cocktail

A refreshing gin-based cocktail, with cream of coconut, lime, mint and raspberry. Muddled, shaken and poured over ice.

Limoncello fizz cocktail

From organic lemons comes this organic Cornish Limoncello from Atlantic Distillery, created a few miles away from the hotel. A light summers cocktail drink with zesty notes.

Cornish Negroni

Stirred, not shaken. This Cornish Negroni with Rose Gin and Vermouth give the drink a delicate finish.

State side mule

We make ours with Tin Cup American whiskey, raspberries, mint and lemon, topped with London essence ginger beer to finish.
